The reason why many people jailbreak their iPhones, iPads and iPod touches is to add, or sometimes even remove, certain functionality. Some even just want to alter how one particular feature works, tweaking something about it that makes it infinitely more useful than Apple had ever intended.
It was only a few days ago when iOS developer and hacker Pod2g showed off his new untethered jailbreak exploit running on iOS 5. At that time, he tested it on a third-gen iPod touch running iOS 5.0 and wasn’t sure if it would also work on the new iOS 5.0.1 as well. But he did promise to test it on iOS 5.0.1 and report back accordingly with results.

But now, thanks to iH8sn0w’s iFaith, you can downgrade from iOS 5.1 or iOS 5.0.1 to iOS 5 custom firmware as long as you have APTicket + SHSH blobs saved for it.
