MuscleNerd of iPhone Dev-Team has come up with a very useful compilation of Cydia apps that works with the iPad. In one of his latest tweets, he invites users from the community to contribute to the jailbreak scene by helping to update the official iPad jailbreak compatibility list.
You can find all the details of the compatibility list posted here on Google Docs. It is in the form of spreadsheet that is subdivided into Introduction, Cydia and a Request list. Applications with a green status are safe to install on your iPad, while the one with red status are not.
